Pearl barely prridge ''Koča" (also called Zīdenis, Grūdenis) was more a festivities dish served at celebrations during the cold season of the year.
Rinse the pearl barley until the water is clear and leave for at least 4 hours covered with a water (pearl barely and water in proportions 1:2.5)
Cut the both kinds of meat and onions in cubes. Fry the fresh pork, then add smoked bacon and onions. Fry on low heat for half an hour.
Pour off the water from the pearl barley, and put the soaked pearl barley in the pot. Add the fried meat and onions, add some water and put on low heat to cook for 1.5 hours. During the cooking gradually add milkin portions. When pearl barley is soft, add salt, pepper and cream. Cook for 2-3 more minutes and serve.
